Eggnog Special Recipe
Items Required:
4 cups milk
¼ cup sugar
1 teaspoon vanilla
¼ teaspoon salt
2 beaten eggs
1 beaten egg yolk
1 egg white
½ teaspoon vanilla
2 tablespoons sugar Ground nutmeg
Preparation Method:
In a 2-quart heat-proof pitcher or bowl combine milk, ¼ cup sugar, 1 teaspoon vanilla, and salt. Micro-cook, uncovered, till hot, about 8 minutes. Stir. Combine eggs and egg yolk. Gradually stir 1cup of the hot mixture into beaten egg mixture. Return to hot mixture. Micro-cook, uncovered, 2 minutes more, stirring once. Beat egg white and ½ teaspoon vanilla till soft peaks form; gradually add the 2 tablespoons sugar, beating to stiff peaks. Pour eggnog into mugs. Sprinkle with nutmeg. Makes 8 (4-ounce) servings.
