Corn-Stuffed Onions

Ingredients:

Drape this vegetable dish with a cheese sauce-

- 6 medium onions
- 1 12-ounce can whole kernel corn with sweet peppers, drained
- 2 tablespoons butter or margarine
- 1 10 ½ -ounce can condensed cream of celery soup
- 1 cup shredded sharp American cheese (4 ounces)

Preparation Method:

Peel and hollow out onions; chop centers to make 1 cup. Fill onion shells with corn; reserve remaining corn. Place stuffed onions in 8×8x2-inch baking dish. Micro-cook, covered, 12 minutes, turning dish once; set aside.

In a 4-cup glass measure or bowl micro-cook chopped onion in butter till tender, 2 to 3 minutes. Stir in soup, cheese, and remaining corn. Micro-cook, uncovered, till heated through, about 4 minutes. Makes 6 servings.
