Milwaukee Mix-Up Recipe

Preparation Method:
In 2-quart casserole combine 2 medium potatoes, peeled and sliced; ½ cup water; and ¾ teaspoon salt. Micro-cook, covered, till potatoes are tender, about 7 minutes, giving dish a quarter turn every 2 minutes. Drain; set aside.
In same casserole crumble 1 pound ground beef. Add ½ cup chopped green pepper, and ½ teaspoon salt. Micro-cook, covered, till meat is brown and vegetables are tender, about 5 minutes, stirring several times to break up meat. Drain off excess fat. Stir in 2 tablespoons all-purpose flour, 1 teaspoon instant beef bouillon granules, 1teaspoon sugar, and ½ teaspoon caraway seed. Stir in 1 cup water. Cook, covered, till thickened and bubbly, about 4 minutes, stirring after each minute. Stir in one 16-ounce can sauerkraut, drained and snipped, and 2 tablespoons chopped canned pimiento. Carefully stir in potatoes. Cook, covered, till hot, about 5 minutes, carefully stirring three times. Sprinkle ½ cup shredded Swiss cheese over top. Cook, uncovered, to melt cheese, about 30 seconds. Serve with dairy sour cream. Serves 4.
