Apple-Gingerbread Cobbler Recipe

Ingredients:

- 4 medium apples, peeled, cored, and sliced (4 cups)
- 1 cup water
- ¼ cup packed brown sugar
- 1 tablespoon lemon juice
- ¼ teaspoon ground cinnamon
- 1 tablespoon cold water
- 2 teaspoons cornstarch
- 1 14-ounce package gingerbread mix
- Whipped cream

Preparation Method:

In 1 ½ -quart casserole combine apples, 1 cup water, brown sugar, lemon juice, and cinnamon. Micro-cook, covered, till apples are tender, about 6 ½ to 7minutes, stirring once.

Blend 1 tablespoon cold water into cornstarch; stir into apple mixture. Micro-cook, uncovered, till thickened and bubbly, 1 ½ minutes, stirring twice. Turn into 12×7 ½ x2-inch baking dish. Prepare gingerbread mix following package directions. Pour 1 cup of the batter evently over apple mixture. Micro-cook, uncovered, till wooden pick comes out clean, about 5 minutes, giving dish a half turn after 2 ½ minutes. Serve warm with whipped cream. Makes 8 servings.

To bake remaining batter, fill paper bake cup-lined 6-ounce custard cups half full (about 3 tablespoons). Micro-cook four at a time, uncovered, till done, 1 `1/2 to 2 minutes, rearranging cups once. Makes 8 cupcakes.
