Apple-Rice pudding

Ingredients:

- 1 cup apple cider or apple juice
- ¾ cup chopped apple (peeled, if desired)
- 1 tablespoon butter or margarine
- 1 tablespoon sugar
- ¼ teaspoon salt
- Dash ground cinnamon
- 2/3 cup Minute Rice
- 1 cup frozen whipped dessert topping, thawed Ground nutmeg

Preparation Method:

In 1 ½ -quart casserole combine apple cider or apple juice, chopped apple, butter, sugar, salt, and ground cinnamon. Micro-cook, covered, till mixture bubbles, about 3 ½ minutes. Stir in rice. Cover and let stand for 5 minutes to absorb liquid; fluff mixture with a fork. Place in the refrigerator to chill.

Just before serving, fold in whipped dessert topping. Spoon into dessert dishes. Sprinkle with ground nutmeg. Makes 4 servings.
