Strawberries Hawaiian Recipe

Ingredients:

1pkg. (10-oz.) frozen sliced strawberries
1/2 cup red currant jelly
2 tablespoons cornstarch
2 tablespoons rum or syrup from canned pineapple

Preparation Method:

In 1 1/2-qt. casserole place berries. Microwave at High 2 1/2 to 3 1/2 Minutes, until defrosted. Mash with spoon. Add jelly. Cover. Microwave at High 4 Minutes, or until boiling.

Mix cornstarch with rum or syrup. Add to hot strawberries. Stir well. Cover. Microwave at High 2 Minutes more, until thick. Makes about 1 1/2 cups.

Flaming Peaches Recipe

Ingredients:

4 large fresh peaches, or 1 can (29-oz.) peach halves
1/4 cup apricot jam
3 tablespoons sugar
1 tablespoon peach syrup or water
2 teaspoon lemon juice
8 teaspoon currant jelly
8 tablespoons macaroon crumbs
1/4 cup brandy

Preparation Method:

Peel and halve peaches and remove pits. In 10×6x2-in. dish place peaches cut side up. For canned fruit, drain syrup, reserving 1 tablespoon.

In 1-cup glass measure place jam, sugar, syrup and juice. Microwave at High 1 to 1 1/2 Minutes, or until sugar dissolves. Mix well. Pour over peaches.

Place 1 teaspoon currant jelly and 1 tablespoon macaroon crumbs on each peach half. Microwave at High 3 to 4 Minutes.

Measure brandy into 1-cup glass measuring cup and microwave at high 1/4 minute. Remove 1 metal tablespoonful. Pour rest of brandy over peaches. lgnite brandy in spoon and pour over peaches to flame. Serve peaches hot with ice cream if desired. Makes 8 servings.
