Ingredients:
- ¼ cup butter
- 4 medium onions, thinly sliced
- 3 cloves garlic, minced
- 2 (13 ¾ oz.) cans beef broth
- 2 tablespoons dry sherry
- ½ teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 4 to 5 slices French bread (optional)
- 1 to 1 ½ cups Swiss cheese, shredded (optional)
Preparation Method:
In 3 –quart casserole, place butter, onions and garlic. Microwave at HIGH (10) 8 to 10 minutes until onions are tender. Add beef broth, sherry, salt and pepper; stir to blend. Microwave at HIGH (10) 12 to 14 minutes.
Serving Suggestion: Top individual servings of soup with one slice of French bread covered with Swiss cheese. Microwave at HIGH (10) 30 to 45 seconds until cheese is completely melted.
