Stuffed Peppers Recipe

Ingredients:

- 6 medium yellow, green or red peppers
- 1 ½ lbs. ground chuck
- 1 cup cooked long grain rice
- ½ cup onion, chopped
- ½ cup celery, sliced pimento, drained
- 1 clove garlic, minced
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 (10 ¾ oz.) can condensed tomato soup
- ½ teaspoon basil
- ½ cup sharp Cheddar cheese, shredded

Preparation Method:

Cut off tops of peppers. Remove seeds and membrance. In large bowl, combine beef, rice, onion, celery, pimento, garlic, salt and pepper. Fill peppers with meat mixture. Arrange in 3-quart casserole soup and basil; pour over peppers. Cover. Microwave at HIGH (10) 24 to 26 minutes. Rotate dish ¼ turn after 12 minutes.

Sprinkle cheese over peppers. Let stand, covered. 5 minutes to melt cheese.

Total Microwave Cooking Time 21 to 23 Minutes
Makes 6 servings
