Fruited Pork Tenderloin Recipe

Ingredients:

- 2 to 3 (2 1/2 tp 3lbs. total) whole pork tenderloins
- 1/4 cub pork tenderloins
- 1/4 cup butter, melted
- 1 cup Madeira wine
- 1 tablespoon molasses
- 1/4 teaspoon garlic powder
- 2 teaspoons thyme
- 1 cup pitted prunes
- 1 cup dried apricots


Preparation Method:

Place tenderloins In 2-quart oblong glass baking dish. In small bowl, combine butter, wine, molasses, garlic powder and thyme. Pour over tenderloins. Cover and marinate in refrigerator 6 to 8 hours or overnight. Microwave at MEDIUM-HIGH(7) 25 minutes. Turn tenderloins over and add prunes and apricots, making certain that fruit is submerged in liquid. Microwave at MEDIUM-HIGH (7) 20 minutes.

Total Microwave Cooking Time 45 Minutes
Makes 6 servings
