Beef Teriyaki Bites Recipe
Ingredients:
1 lb. beef tenderloin or sirloin
1/4 cup cocktail sherry
1/4 cup soy sauce
30 thin bamboo skewers, 5-in. long
Preparation Method:
Cut tenderloin into 1/4-in slices, then into 1-inch squares to make about 90 pieces. In a deep bowl stir together sherry, honey and soy sauce. Add meat and stir to coat all pieces with teryaki mixture. Cover with plastic wrap and marinade at least 1 hour or overnight, stirring once or twice so all meat is marinated.
On each skewer thread 3 pieces of meat, skewering each piece twice, in opposite corners, so it looks as though there are 3 diamond shapes on each skewer. Microwave at High 1 1/2 to 2 Minutes, rotating dish 1/2 turn after 3/4 minute until beef is just cooked. Repeat with rest of skewers.
Makes about 30 skewers.
