CORNED BEEF OR BEEF BRISKET

Ingredients:

1 corned beef or beef brisket, 3 to 4 lb.
1/2 cup chopped onion
2 garlic cloves, crushed
2 bay leaves
2 cups water

Preparation Method:

In 13×9x2-in. dish place meat. Cover with onion add garlic and bay leaves. Add water. Insert temperature probe so tip rests in water on bottom of dish.

Cover tightly with plastic wrap, arranging loosely around probe to vent. Attach cable end at receptacle. Microwave at Automatic Simmer 5 to 7 hours. To serve, remove from broth and slice thinly and diagonally across the grain. If desired, serve slices with some of the broth.

Corned beef must be covered with water and cooked in stoneware accesfories or 3-qt. casserole. Makes 8 to 10 servings.

VARIATIONS:

Corned Beef and Cabbage: Cookcorned beef as in recipe above. Remove from broth and keep warm .To broth, add 1 head cabbage, cut into 6 wedges, Microwave at High 20 to 25 Minutes, rearranging wedges after 10 minutes, until tender. Serve cabbage with sliced corn beef.

Barbecued Brisket: Cook brisket as in recipe above. After simmering, drain off liquid. Coat top surface with bottled barbecue sauce. Microwave at High 5 to 8 minutes, until sauce begins to form glaze. Slice and serve with more sauce, if desired.
