Bean Soup
Ingredients:

1 lb. navy beans water
1 meatly ham bone or 2 cups diced cooked ham
1 cup celery, finely chopped
1 onion, finely chopped
2 tablespoons parsley, finely chopped
1 teaspoon salt
ΒΌ teaspoon pepper
1 bay leaf

Preparation Method:

Wash and sort beans. Place in 4-qt. casserole with water to cover and soak overnight. In the morning, drain beans and add 6 cups fresh water.
Microwave uncovered at High 60 minutes.

To beans, add ham, celery, onion, parsley, salt, pepper and bay leaf. Insert temperature probe so tip rests in liquid of bottom of dish, halfway between center and side . Cover tightly with plastic wrap, arranging loosely around probe to vent. Attach cable end at receptacle.

Microwave at Automatic Simmer 12 to 14 hours, until beans are very tender. Remove ham bone and bay leaf. Cut meat off bone, return meat to bean soup. Add water to thin, if desired. Serve hot. Makes 8 to10 servings.
