Lemon Lovers Meatloaf Recipe

Lemon juice and a garnish of lemon slices add tang to this meatloaf.
Ingredients:
3/4 cup ketchup
1/4 cup brown sugar (packed)
3/4 teaspoon dry muatard
1/4 teaspoon allspice Dash ground cloves
1 1/2 lb. ground chuck beef
3 slices day-old bread, cubed
1 egg, slightly beaten
1/3 cup lemon juice
1/4 cup chopped onion
2 teaspoos seasoned salt
6 very thin lemon slices
Preparation Method:
In small bowl mix together ketchup, brown sugar, dry mustard, allspice and cloves. Set aside. Mix together beef, bread cubes, egg, lemon juice, onion and salt. Mold into rounded flat loaf in 9-in. Pie plate.
Spread half the reserved sauce over loaf and arrange lemon slices on top. Insert temperature probe so tip is in center of loaf. Cover tightly with plastic wrap, arranging loosely around probe to vent. Attach cable end at receptacle. Microwave at High. Set Temp, Set 170 degree.
When oven signals, remove loaf and let stand 5 minutes to firm before serving. Remove plastic wrap and spread remaining sauce over loaf before serving. Makes 6 servings.
On models not equipped with probe use minimum microwave time and check for doneness.
Mini Meatloaves: Shape meat mixture into 6 individual loaves and arrange in 12×8x2-in. dish. Cover with wax paper. Microwave at High 4 Minutes. Evenly divide half of sauce over loaves. Top each loaf with a lemon slice. Recover with wax paper. Rotate dish 1/2 turn. Microwave at High 7 to 9 minutes, until done. Heat and spoon remaining sauce over loaves before serving.
