Simmered Corn Beef Recipe

Ingredients:
3 to 3 1/2 lb.corned beef brisket
3 cups water
1 medium onion, minced
2 bay leaves
Preparation Method:
In 3-qt casserole place brisket with water. Slice onion over brisket and add garlic and bay leaves. Cover. Microwave at High 25 minutes. Turn brisket over. Recover. Microwave at Medium 60 to 70 Minutes, turning brisket over after 30 minutes. To serve: diagonally slice corned beef very thin for sandwiches or for serving with boiled vegetables. Makes 6 to 8 servings.
