Pineapple Ham And Yams Recipe

Ingrdients:
1 tablespoon butter
1 can (8-oz.) yams or sweet potatoes, drained
2 tablespoons brown sugar
4 slices (about 4-oz.) packaged, thinly sliced cooked ham
1 can (8-oz.) sliced pineapple (4 slices)
1/4 cup coarsley chopped pecans
1/4 cup light brown sugar (packed)
1/4 cup syrup reserved from pineapple
Preparation Method:
In 1-qt. casserole place butter. Microwave at High 1/4 to 1/2 Minutes, to melt. Add drained yams and mash well. Stir in brown sugar. Divide mixture equally over one end of each ham slice. Roll up into firm rolls.
Drain pineapple, reserving juice. Place pineapple slices in 8-in. square dish. Cover each with ham roll, seam side down.
Compine pecans, sugar and pineapple syrup. Spoon over ham rolls. Cover with wax paper. Microwave at High 5 to 7 Minutes, rotating dish 1/2 turn after 4 minutes. Makes 4 servings or use thinly sliced leftover ham, about 6-in. long by 3-in. wide.
