Veal Parmigiana Recipe

Ingredients:
6 small veal loin chops, 3/4 -in thick
1 egg, beaten
1 cup buttery flavored cracker crumbs
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
1 cup (4-oz.) shredded Mozzarella or pizza cheese
2 cans (8-oz. each) tomato sauce
1 teaspoon crushed oregano
1/4 cup grated Parmesan cheese
Preparation Method:
Coat chops with beaten egg, then with mixture of crumbs, salt, pepper and cheese. In 12×8x2-in. dish, arrange chops so thickest meaty areas are close to edges and tails are in center. Cover with wax paper. Microwave at Medium High 10 Minutes.
Turn chops over. Distribute cheese over chops, then mixture of tomato sauce and oregano. Top with Parmesan. Cover. Microwave at Medium High 15 to 18 Minutes more, until tender. Let stand, covered, 10 Mintues before serving. Makes 6 servings.
