Jelly Omelet Recipe

Ingredients:
1/4 to 1/3 cup strawberry or currant jelly
3 eggs, seaparated
2 tablespoons water
1 tablespoon butter
Preparation Method:
In custard cup place jelly. Microwave at High 1 minute, until jelly is soft and can be stirred smooth. Set aside.
In large mixer bowl beat egg whites at highest speed of mixer, until soft peaks form. Then, in smaller bowl, using same beaters, beat yolks and water. Gently pour yolk mixture over beaten whites. Fold together carefully.
In 9-in pie plate place butter. Microwave at High 1 Minute, swirl to coat dish. Carefully pour egg mixture into pie plate. Microwave at Medium 4 to 5 Minutes, rotating dish 1/4 turn every minute, until set but still glossy on top. Spoon jelly over half of omelet. Quickly run spatula or turner around sides and bottom of dish. Fold plain ghalf of omelet over jelly half. Gently slide onto serving plate. If desired, sprinkle cinnamon-sugar over omelet before serving. Makes 1 to 2 servings.
