Chocolate Souffle Recipe

Chocolate Souffle
This tastes like fluffy chocolate pudding. A crack may appear on top, and is normal with this souffle.

Ingredients:

1/4 cup cocoa
1/4 cup flour
1/2 cup sugar
1 teaspoon salt
2 cans (5-oz. each) evaporated milk
1/4 cup butter
6 eggs, separated
3/4 teaspoon cream of tartar
1/2 cup sugar

Preparation Method:

In 1-qt. measure mix cocoa, flour, sugar and salt to blend. Add milk and stir smooth. Microwave at High 6 Minutes, stirring after 2 minutes, then after each additional minute.

Stir butter into hot mixture. In large mixer bowl beat egg whites with cream of tartar until foamy. Gradually add sugar, beating to a stiff, glossy merigue.

With same beaters, beat egg yolks in medium mixer bowl until thick and lemon colored. Add chocolate mixture, beat smooth. Gently pour chocolate mixture, beat smooth. Gently pour chocolate mixture over meringue, fold together gently, just until blended. Pour into ungreased 3-qt. souffle dish. Microwave at Low 10 Minutes, rotating dish 1/4 turn every 5 minutes. Microwave at Medium 12 to 14 Minutes more, rotating dish 1/4 turn every 5 minutes, until puffed top edges begin to appear dry and souffle has set appearance. Serve immediately. Makes 6 to 8 servings.
