Milk Gravy Recipe

Be sure to use a 1-qt. utensil to prevent boilover. These proportions are for gravy which runs easily from spoon. For thicker gravy, which mounds from spoon, use 1/3 cup flour.

Ingredients:

1/4 cup chicken or beef drippings
1/4 cup flour
1/4 cup teaspoon salt
1 1/4 cups milk

Preparation Method:

In 1-qt. glass measure, measure drippings. Microwave at High 1 to 2 Minutes, until hot. Add flour and salt. Stir well. Stir in milk slowly. Microwave at High 6 to 8 minutes, stirring every minute. Makes about 1 1/2 cups.

Variations:

Prepare milk gravy as above, except, instead of 1 1/4 cups milk, use 2/3 cup milk and 2/3 cup whipping cream.

Brown gravy:

Prepare milk gravy or cream gravy as above, using beef or lamb drippings and adding 1/2 teaspoon brown bouquet sacue.
