Eggplant Italiano Recipe

Ingredients:

1 medium eggplant
2 cans (8-oz. each) tomato sauce
1 to 2 teaspoons oregano
1/2 cup shredded sharp cheese, optional
1 pkg.(6-oz.) mozzarella cheese, sliced

Preparation Method:

Pare eggplant slice 1/8-in thick. Spread 2 tablespoons tomato sauce in bottom of 2-qt. casserole. layer half of eggplant, 1 can tomato sauce, half of oregano and half of sharp cheese. Repeat layers. Cover. Microwave at High 14 to 16 Minutes, rotating dish 1/4 turn after 8 minutes.

Add mozzarella cheese. Microwave at High 1 to 2 Minutes, until cheese has melted. makes 4 to 6 servings.
