Golden Stuffed Artichokes Recipe

Ingredients:
4 medium artichokes
1 cup water
1/2 teaspoon salt
1 pkg. (6-oz.) chicken flavor top-of-range type stuffing mix with crumbs
1 1/2 cups water
1/4 cup butter
2 small carrots, grated
1 small onion, diced
1 tablespoon olive oil
1 pkg. (3 1/4-oz.) cashews, salted
Preparation Method:
Prepare artichokes by dish carding the tough outer leaves. Snip tips off with scissors and cut off steams. In 3-qt. casserole place artichokes with salted water. Cover. Microwave at High 14 to 15 Minutes, rotating dish 1/2 turn after 7 minutes. Remove and place artichokes upside down to partially cool.
In 1 1/2-qt. casserole, combine vegetable seasoning packet from stuffing mix. water and butter. Cover .Microwave at High 4 to 5 Minutes .Stir crumbs into mixture just to moisten. Cover and let stand.
In 1-qt. casserole combine carrots, onion and oil. Cover. Microwave at High 5 Minutes, until vegetables are soft. Add these vegetables to bread stuffing along with cashews.
Force the center of each artichoke open to form a well. Remove the center leaves and the choke (the choke is the fuzzy, purple tinged area covering the heart, or base of the artichoke) with a spoon. Stuff artichokes with cashew carrot stuffing. Rearrange in 3-qt. casserole. Microwave at High 4 to 6 Minutes, uncovered, until heated. Makes 4 stuffed artichokes.
