Molasses Cornmeal Pudding Recipe

Ingredients:
3 cups milk
2/3 cup dark molasses
2/3 cup yellow cornmeal
1/3 cup sugar
1 teaspoon salt
3/4 teaspoon nutmeg
1/4 cup butter
Preparation Method:
In 2-qt. casserole stir together milk and molasses. Microwave at High 5 Minutes. In small bowl mix together cornmeal, sugar, salt, cinnamon and nutmeg. Gradually stir into hot milk mixture. Add butter. Cover Microwave at High 14 Minutes, stirring every 2 to 3 minutes, until smooth and thickened. Consistency is preferred add 1 cup milk at this time. Microwave at Medium High 12 to 14 Minutes more until consistency of cornmeal mush. Let stand about 10 minutes before serving. Makes about 8 servings.
