Twice Baked Potatoes Recipe
Ingredients:

Potatoes
For each potato
2 tablespoons butter
2 tablespoons sour cream
1/4 teaspoon salt
Dash pepper

Preparation Method:

Microwave desired number of potatoes according to slice the top from each potato. With teaspoon, remove center of potatoes to mixing bowl, leaving shells intact.

Add to mixing bowl butter, sour cream, salt and pepper. Mix with electric mixer until smooth. Divide potato mixture evenly among shells, mounding, if necessary. Sprinkle with chives if desired. Place potatoes on plate suitable for microwave oven. Potatoes may be refrigerated at this point if desired.

If potatoes are microwaved immediately, microwave at High 1 minute per potato. If more than 2 potatoes are microwaved at one time, arrange in a circle and rotate dish 1/2 turn after half of time.

If potatoes are microwaved from refrigerotor temperature, increase time for each potato by 1/2 minute.
