Cherries Jubille Recipe

Ingredients:

2 cans (16-oz. each) dark sweet cherries
3 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon grated lemon rind
3/4 cup sugar
1/2 cup brandy

Preparation Method:

Into 2-qt. casserole drain cherry syrup. Stir in cornstarch, lemon juice, rind and sugar. Microwave at High 5 to 6 Minutes, stirring after 3 minutes, until sauce begins to thicken. Add cherries, stirring well.

Measure brandy into glass measure. Microwave at High 1/2 Minute. Pour 1 tablespoon heated brandy into metal tablespoon and remaining brandy over top of cherries. Ignite brandy in the tablespoon and pour over cherries. When flame has subsided, serve over ice cream. Makes 8 to 10 servings.
