Brandied Cranberry Pie Recipe

Ingredients:

2 cups prepared graham cracker crumbs
1/4 cup sugar
1/2 cup (1/4-lb.) butter, melted
1 can (16-oz.) whole cranberry sauce
1 1/4 cup prepared mincemeat
1 cup coarsley chopped pecans
2 tablespoons sugar
2 tablespoons butter melted
1/4 cup brandy
2 tablespoons cornstarch

Preparation Method:

In small bowl mix together crumbs, sugar and butter. Pat half of mixture firmly into 9-in. pie plate. In mixing bowl stir together cranberry sauce, mincemeat, pecans, sugar, butter, brandy and cornstarch. Spread mixture over crust. Pat remaining crumbs firmly in wreath around outside edges of pie forming a firm unbroken crust about 2-in. wide. (Center of pie remains open for attractive finished appearance.)

Insert temperature probe so tips is in center of pie. Cover with wax paper. Attach cable end at receptacle. Microwave at High. Set Temp, Set 200 degree.

When oven signlas, remove pie and let stand 10 minutes covered with wax paper. Then remove wax paper so crumb topping is allowed to dry and crisp. Serve warm or cold.
