Ingredients:
1/2 cup butter, softened
1/4 cup brown sugar
1 1/4 cups unsifted all-purpose flour
2 eggs
1 cup brown sugar
1 teaspoon vanilla extract
2 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (3 to 4-oz.) flaked coconut
1 cup unblanched sliced almonds
Preparation Method:
In a small mixing bowl, cream together butter and brown sugar. Add flour, mixing well to make soft dough. Press evenly in bottom of 12×8x2-in. dish. Microwave at Medium 6 to 8 minutes, rotating dish 1/2 turn every 2 minutes. Let stand about 5 minutes to set slightly.
In large mixing bowl beat eggs, brown sugar, vanilla extract, flour, baking powder, and salt at medium speed until well blended. Stir in coconut and 1/2 cup almonds.
Spread mixture over crust. Sprinkle remaining almonds over top. Microwave at Medium 10 to 13 Minutes, rotating dish 1/2 turn after 5 minutes until set. Let cool before cutting. Makes 24 bars.
