Floatting Islands Recipe
Ingredients:
1/3 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 3/4 cups milk
2 drops yellow food color
2 egg yolks, well beaten
2 egg whites
1/4 cup sugar
Preparation Method:
In 2-qt. casserole blend together sugar, cornstarch and salt until well mixed. Add milk and food coloring, stirring until well blended. Microwave at High 8 to 10 Minutes, stirring every 3 minutes until smooth and slightly thickened.
Stir a small amount of hot pudding quickly into yolks. Return egg mixture to hot pudding, mixing well. Microwave at Medium High 2 to 4 Minutes, stirring after 1 minute, until slightly thickened.
Beat egg whites until foamy, on high speed of mixer. Gradually add sugar, beating to a stiff glossy meringue, Drop merigue immediately in 8 to 10 Mounds over hot pudding. Microwave at Medium 1 to 2 Minutes to set meringues slightly. Chill before serving. Makes 6 to 8 servings.
