Fruit Filled Pineapple Recipe
Ingredients:
1 medium fresh pineapple
1 cup (3 to 4-oz.) shredded coconut
1/2 cup toasted sliced almonds
1 can (11-oz.) mandrain orange sections, drained
1/2 cup maraschino cherries without stems, drained
1/2 cup sweet orange marmalade
1/4 cup light rum
Preparation Method:
Cut pineapple, including leafy crown, in half lenthwise. Cut out fruit, leaving outside shell intact. Remove woody core; cut remaining fruit in chunks.
Toss pineapple chunks with coconut, almonds, oranges, cherries and marmalade. Place pineapple shells in 13×9x2-in. dish or on serving plate suitable for microwave oven. Fill shells with fruit mixture.Insert temperature probe so tip is in center of one of pineapple halves. Cover with wax paper. Attach cable end at receptacle.Microwave at High. Set Temp, Set 120 degreee.
Measure rum into glass measure. Microwave at High 1/4 Minutes. Remove 1 metal tablespoonful. Pour rest of rum over pineapple. lgnite rum in spoon and pour over pineapple to flame. Makes 6 servings.
