Ingredients:
1 microwaved pastry shell
1 cup sugar
1/3 cup cornstarch
1/8 teaspoon salt
2 cups cold water
1 to 2 drops yellow food color
3 egg yolks
3 tablespoons butter
1/4 cup fresh lemon juice
2 teaspoons grated lemon rind
Preparation Method:
In 2-qt casserole mix together sugar, cornstarch and salt. Blend in water and food color; stir smooth Microwave at High 6 to 8 minutes, stirring after 3 minutes, until slightly thickened.
In medium bowl beat yolks well. Add sauce; mix well. Microwave at High 3 to 5 Minutes, stir after 2 minutes, until thick.
Stir butter, juice and rind into mixture. Pour into pastry. Finish with meringue or, if desired, cool and decorate pie with whipped cream. Makes 1 (9-in.) pie.
