Pecan Logs Recipe

Ingredients:

1/2 cup (1/4-lb.) butter
1 lb. light brown sugar
2 eggs, well beaten
3 teaspoons vanilla extract
2 cups chopped pecans
1 1/2 cups pancake or biscuit mix
Confectioners Sugar

Preparation Method:

In large mixing bowl place butter. Microwave at High 1 Minute, or until melted. Into butter, mix brown sugar, eggs and vanilla. Stir well. Blend in pecans and pancake mix, mixing thoroughly. Pour batter into greased 12×8x2-in. dish. Microwave at High 8 to 10 Minutes, rotating dish 1/2 turn every 3 minutes. Center will not be quite set, but will firm upon cooling. When cool,cut into long thin bars.

Sprinkle top with confectioners sugar, or, cut into bars and roll in confectioners sugar. Makes about 40 to 50 bars.
