Ingredients:
1 Basic Pastry Sheel, uncooked
1 egg yolk
2 tablespoons dark corn syrup
1/4 cup butter
3 whole eggs, plus extra egg white
1 cup dark corn syrup
1/3 cup brown sugar
1 tablespoon flour
1 teaspoon vanilla
1 1/2 cups pecan halves
Preparation Method:
Roll out pastry and fit into 9-in. pie plate. Brush inside of shell with mixture of egg yolk and corn syrup. Microwave at High 6 to 7 Minutes, rotating dish 1/2 turn after 3 minutes.
In large glass mixing bowl place butter. Microwave at High 1/2 to 1 Minute, until melted. Add edges to melted butter. Beat with fork to mix eggs well. Blend in syrup, sugar, flour and vanilla. Then, mix in peach halves. Pour into crust. Microwave at Medium 12 to 15 Minutes, rotating 1/2 turn after 5 minutes. When done, top surface is dry and puffed, and filling is set. Makes 1 (9-in.) pie.
