Pudding Trifle Recipe
Ingredients:

1pkg. (3 1/4-oz.) vanilla pudding mix, not instant
2 1/2 cups milk
2 eggs yolks, beaten
1 (8-in) microwaved yellow or white cake layer
1/2 cup cherry preserves
1/4 to 1/2 cup sherry, rum or pineapple juice
1cup whipping cream
3 tablespoons confectioners sugar

Prepration Method:

In 1 1/2-qt. casserole place pudding. Gradually add milk, stirring to blend well. Microwave at High 6 to 8 Minutes, stirring every 3 minutes, until thickened.

Gradually stir half of pudding into beaten yolks. Return egg mixture to casserole, stirring well. Microwave at Medium High 4 to 6 Minutes more, stirring every 2 minutes, until thickened. Cool.

Split cake layer and fill with preserves. Cut into pieces and arrange half in 2-qt. casserole. Sprinkle with half of sherry and cover with half of cooled pudding. Repeat.

Whip cream with confectioners sugar until soft peaks form. Spread over pudding. Chill 4 hours or more before serving. Makes 8 to 12 servings.
