Pumpkin Pie Recipe

Ingredients:

1/2 cup (1/4-lb.) butter
2 cups vanilla wafer crumbs
2 tablespoons sugar
1 can (16-oz.) mashed pumpkin
1 cup brown sugar
1 tablespoon pumpkin pie spice
1 tablespoon flour
1/2 teaspoon salt
1 can (13-oz.) evaporated milk
2 eggs, beaten

Preparation Method:

In 10-in pie plate place butter. Microwave at High 1 Minute, until melted. Add crumbs and sugar; mix well. Firmly press on bottom and up sides of dish. Microwave at High 2 Minutes, rotating dish 1/2 turn after 1 minute.

In 2-qt. casserole blend together pumpkin, brown sugar, pumpkin pie spice, flour, salt, evaporated milk and eggs. Microwave at Medium 12 to 14 minutes, until hot and thickened.

Pour hot pumpkin custard filling into prepared pie shell. Microwave at Medium 22 to 25 minutes, rotating dish 1/2 turn after the center is still slightly soft (very much like a conventionally baked pie). Let stand at room temperature about 15 to 20 minutes to set and cool before serving. Makes 1 (10-in.) pie
