Basic Butter Cake Recipe
Ingredients:
2 3/4 cups unsifted all-purpose flour
2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup (1/2-lb.) butter, softened
1 cup milk
1 1/2 teaspoons vanilla extract
1 egg
3 eggs
Preparation Method:
In large mixing bowl stir together flour, sugar, baking powder and salt. Add butter, milk, vanilla and 1 egg. Beat 2 minutes at lowest speed of mixer, scraping bowl constantly for first 1/2 minute.
Stop mixer and add eggs. Continue beating at lowest speed, scraping bowl often, 1 more minute. Bater will look curdled.
Pour batter into 2 paper towel lined 8-in. round dishes; spread evenly. Microwave 1 cake at a time. Microwave at High 8 to 10 minutes, rotating dish 1/2 turn after 4 minutes. Let stand directly on heat proof counter or wooden or wire rack to complete cooling, if desired. Makes 2 (8-in. round) cakes
Nut Cake:
Stir 1 cup finley chopped nuts into finished batter.
Marble Cake:
After mixing batter, take out about 1/3 (2 1/4 cups) plain batter and drop in small mounds over bottom of dishes. To remaining batter in bowl, mix in 1/4 teaspoon red food coloring; take out 1/2 (2 1/2 cups) of pink batter and drop in mounds in dishes. To remaining pink batter in bowl add 2 tablespoons cocoa and 1/2 teaspoon cinnamon; mix well and drop chocolate batter in mounds in dishes. With small spatuls, swirl 3 colors of batter as much as desired. Microwave as above.
