Ingredients:
1 1/2 cups sugar
1 cup cooking oil
1 teaspoon vanilla extract
3 eggs
1 1/2 cups unsifted all-purpose flour
3/4 teaspoon salt
1 1/4 teaspoons baking soda
2 1/2 teaspoons cinnamon
2 1/4 cups raw grated carrots
1/2 cup chopped walnuts
Preparation Method:
In large mixing bowl blend sugar, oil and vanilla. Add eggs and beat well. In small bowl, stir together flour, salt, soda and cinnamon. Add to sugar egg mixture and mix in.
Fold in carrots and walnuts. Pour batter into greased 12×8x2-in. dish. Microwave at High 13 to 15 Minutes, rotating dish 1/2 turn every 4 minutes. Let stand directly on heat proof counter or wooden board to cool. Frost with Cream Cheese Frosting, if desired. Makes 1 (12×8x2-in. cake.
