Bean Pot Peppers

Ingredients:

- 2 large green peppers Salt
- 1 14-ounce can pork and beans in molasses sauce
- 1/3 cup finely crushed gingersnaps (5 cookies)
- 1 tablespoon instant minced onion
- 1 tablespoon packed brown sugar
- 2 teaspoons Worcestershire sauce
- 1 teaspoon prepared mustard

Preparation Method:

Halve peppers lengthwise; remove seeds and membranes. Place peppers in a 10x6x2-inch baking dish. Micro-cook, covered, for 2 minutes. Sprinkle insides of peppers with salt.

In mixing bowl combine beans in molasses sauce, gingersnap crumbs, instant minced onion, brown sugar, Worcestershire sauce, and prepared mustard; mix well. Spoon bean mixture into the four pepper halves. Micro-cook, uncovered, till beans are heated through about 4 minutes. Garnish with quartered gingersnaps, if desired. Makes 4 servings.
