Item required
2 cups milk
1/4 cup sugar
21/2 tablespoons quick-cooking tapioca 1/4 teaspoon salt
2 eggs, separated
2 tablespoons sugar
1 teaspoon vanilla
Setting: DEFROST
1.Combine milk, 1/4 cup sugar, tapioca, salt and egg yolks in 4-cup glass measure; mix well.
2.MICROWAVE for 8 MINUTES. Stir and MICRO-WAVE for 6 to 7 MINUTES or until mixture boils.
3.Beat egg whites in small mixer bowl until frothy. Gradually add 2 tablespoons sugar, beating until mixture forms soft peaks. Beat in vanilla. Fold egg white mixture into pudding. Serve warm or cold.
4 to 6 Servings
TIP If desired, fold in 1/2 cup finely chopped dates. peaches, apricots, strawberries, raspberries or other desired fruit.
