New England Boiled Dinner Recipe

Ingredients:
1 recipe Simmered Corned Beef (above)
2 large potatoes, cut up
4 medium carrots, cut lengthwise
1medium head cabbage cut in 6 wedges
Preparation Method:
Microwave corned beef as described above. Remove meat from broth and keep warm. Add potatoes and carrots to broth. Arrange cabbage in a pinwheel on top.
Cover. Microwave at High 25 to 30 Minutes, rearranging after 15 minutes, until vegetables are tender. Discard bay leaves. To serve: diagonally slice corned beef very thin and serve with vegetables. Makes 6 servings.
