Elegant Stuffed Potatoes Recipe

Preparation Method:
Scrub 4 medium baking potatoes; prick several times with a fork. In microwave oven arrange potatoes on paper toweling, leaving at least 1 inch between potatoes. Micro-cook till done, 13 to 15 minutes; rearrange after 8 minutes. When done, halve lengthwise. Scoop out inside; reserve shells. In small mixing bowl combine potatoes, ½ cup cream-style cottage cheese with chives, ¼ cup butter or margarine, 1 teaspoon seasoned salt, and dash pepper. Beat to fluffy consistency, adding about ¼ cup milk. If desired, fold in one 2-ounce can chopped mushrooms, drained. Pile into reserved shells. Arrange on servings plate.
Micro-cook, uncovered, 4 minutes; give dish half turn after 2 minutes. Top with ½ cup shredded American cheese. Cook, uncovered, till melted, 30 to 45 seconds. Serves 8
