
Items Required:
24 fresh mushrooms, each about 1 inch in diameter (1 pound)
1 tablespoon butter or margarine
1/3 cup crumbled blue cheese
3 tablespoons fine dry bread crumbs
¼ cup snipped parsley
Preparation Method:
Remove stems from mushrooms; set caps aside. Chop stems. In2-cup glass measure combine butter and stems. Micro-cook uncovered, till tender, about 2 minutes; stir once. Stir in cheese and crumbs. Spoon about 1 teaspoon filling into each mushroom cap; sprinkle with parsley. Place 12 filled mushrooms in a glass pie plate; micro-cook, covered, till hot, about 2 minutes, turning dish once. Cook remaining mushrooms. Makes 24.
