Chicken Livers Peking

Items Required:

1 tablespoon chopped onion
1 tablespoon butter or margarine
8 ounces chicken livers
2 teaspoons cornstarch
¼ cup chicken broth
1 2-ounce can chopped mushrooms
1 tablespoon soy sauce
1/8 teaspoon ground ginger
1 10-ounce package frozen Chinese-style vegetables
1 3-ounce can chow mein noodles

Preparation Method:

In 1-quart casserole micro-cook onion in butter till tender, about 1 ½ minutes. Cut large livers in half; add livers to onion mixture, coating well. Stir in cornstarch; then mix in broth, undrained mushrooms, soy, and ginger. Place frozen vegetables with sauce atop liver mixture. Micro-cook, covered, 2 minutes. Serve over noodles. Pass soy sauce, if desired. Serves 4.
