Oriental chicken and Cashews Recipe

Items Required:

- 3 tablespoons oil, heated
- 2 (1 to 1 ¼ Ib) boneless
- Chicken breasts, skinned & thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sherry
- 1 tablespoon cornstarch
- ¼ teaspoon ginger
- 1 medium green pepper, cut into small chunks
- ½ cup cashews

Preparation Method:

In 2-quart oblong glass baking dish, combine oil, chicken, garlic, soy sauce, sherry, cornstarch and ginger. Microwave at HIGH (10) 4 to 6 minutes, stirring every minute. Add green pepper and cashews. Cover with plastic wrap. Microwave at HIGH (10) 3 to 4 minutes, until chicken is done and green pepper is tender; stir after 2 minutes. Let stand 3 minutes before serving Serve over rice.

Total Microwave Cooking Time 7 to 10 Minutes
Makes 4 servings
