Creamed Ham Recipe

Creamed Ham
Preparation Method:

2 cups (double recipe) white sauce,
2 cups diced cooked ham
2 hard-poached eggs, diced (below)
1 can (2-oz.) sliced mushrooms, drained
1 tablespoon chopped green pepper
1 tablespoon chopped pimiento
1/4 teaspoon dry mustard

Preparation Method:

In 2-qt. Casserole, mix together white sauce, ham, eggs, mushrooms, green pepper, pimiento and mustard . Cover. Microwave at High 8 to 10 Minutes, stirring after 4 minutes, until hot. Serve as desired, over cornbread, rice or noodles. Makes 4 to 6 servings.

Hard-poached Eggs:

In 1-qt. casserol, place 2 cups water. Microwave at High 5 to 6 Minutes, until boiling. Break eggs onto plate, puncture membrance. Gently slip eggs into water. Cover. Microwave at Medium 3 Minutes. Let eggs stand in water 5 minutes before removing to dice.
