Mixed Vegetable-Ham Bake

Preparation Method:

In 2-quart casserole combine 2 ¼ cups beef broth, ¾ cup uncooked regular rice, ½ cup chopped onion, 1/3 cup chopped green pepper, ¼ cup chopped celery, and 1 teaspoon curry powder; mix well. Micro-cook, covered, 8 minutes, stirring after 4 minutes. Stir in 2 cups chopped fully cooked ham (10 ounces) and one 10-ounce package frozen mixed vegetables, partially thawed. Micro-cook, covered, 12 minutes more, stirring every 3 minutes. Transfer mixture to serving bowl. Makes 4 or 5 servings.
