Curried Lamp Meatballs Recipe

Items Required:

1 beaten egg
2 tablespoons milk
1 cup soft bread crumbs
1 pound ground lamb
½ cup chopped onion
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
4 teaspoons curry powder
¼ teaspoon paprika
¼ teaspoon dried oregano, crushed
1 ½ cups chicken broth
1 medium apple, peeled and chopped Hot cooked rice

Preparation Method:

Combine egg, milk, crumbs, and ½ teaspoon salt. Add lamb; mix well. Shape into 32 meatballs; arrange in 12 x 7 ½ x2-inch baking dish. Micro-cook, covered, 6 minutes, rearranging twice; set aside. In 2-quart casserole micro-cook onion in butter, till tender, about 2 minutes. Blend in flour, curry powder, paprika, oregano, ¼ teaspoon salt and dash pepper. Stir in broth. Micro-cook, uncovered, 1 minute; stir. Cook till thickened and bubbly, about 4 minutes, stirring every 30 seconds. Stir in meatballs. Cook, covered, 3 minutes. Stir in apple. Cook, covered, 2 minutes longer. Serve with rice. Makes 4 servings.
