Split Peas Recipe

Split Peas Soup

1 cup split peas
4 cups water
1 ham hock
1 rib celery, cut in half
1 small onion, sliced
1 tablespoon lemon juice

Preparation Method:

In 3-qt. casserole place peas, water, ham hock, celery, onion and lemon juice. Cover. Microwave at High 15 Minutes. Stir well. Microwave at Medium 60 to 70 Minutes, until tender, stirring every 1/2 hour.

For Split Pea Soup:

Dice meat from hock. Slice celery. Return to dish. Stir in 1 cup water. Cover. Microwave at Medium 5 to 10 Minutes, until hot. Makes 6 to 8 servings.
