Shrimp Gumbo Recipe

Shrimp Gumbo
For spicy flavor, tie 1 to 2 teaspoons crab boil (found in condiment section of supermarket) in a cheesecloth bag and add along with shrimp. For bright color accent, save out about 1/4 of green pepper to stir into finished gumbo.

Ingredients:

1 medium onion, sliced (about 1/2 cup)
1/4 cup butter (use bacon fat, if desired)
2 tablespoons cornstarch
1 cup water
2 cans (16-oz. each stewed tomatoes
1 cup diced green pepper (2 medium)
2 cloves garlic, crushed
2 teaspoons salt
1 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pound raw shrimp, shelled, deveined
2 pkgs. (10-oz. each) frozen okra, defrosted, cut into 1-in. pieces.

Preparation Method:

In 3-qt. casserole place onion and butter. Microwave at High 3 minutes, stirring after 2 minutes, until onion is limp.

In small bowl stir together cornstarch and water. Add to onion along with tomatoes, green pepper, garlic, salt, nutmeg, pepper, shrimp and okra. Stir well. Cover. Microwave at Medium High 29 to 31 Minutes, stirring and recovering after 1/2 of time. Makes 6 to 8 servings.
