
Ingredients:
For soup:
1 medium onion, chopped
2 carrots, diced
2 stalks celery with tops sliced
1 cup diced leeks, optional
1 can (1-lb.) tomatoes
1 pkg (10-oz) frozen mixed vegetables
½ cup uncooked vermicelli, broken into2-in. pieces
1 zucchini, sliced
1 cup shredded cabbage
1 tablespoon dried basil
1 clove garlic, minced
2 teaspoons salt
1 teaspoon oregano
1 can (6-oz.) tomato paste
Preparation Method:
To stock, add onion, carrots, celery, leeks, tomatoes, mixed vegetables, vermicelli, zucchini, cabbage, basil, garlic, salt and oregano. Add tomato paste for heartier flavor. Submerge the chunks beneath broth surface. Insert temperature probe so tip rests on bottom of dish, halfway between center and side. Recover. Attach cable end at receptacle. Microwave at Automatic Simmer 6 to 8 Hours. To serve, ladle into bowls and sprinkle with Parmesan cheese. Serve with crusty bread. Makes 8 to 10 servings.
