Healthy Banana Nut Cake

Items Required

5 tablespoons vegetable oil
100g honey
2 eggs
3 ripe bananas, mashed
1 teaspoon vanilla essence
200g whole flour
1/2 teaspoon salt
1 teaspoon bicarbonate of soda
4 tablespoons hot water
50g chopped walnuts

Preparation Method

1. Preheat oven to 160 C.

2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla.

3. Stir in flour and salt. Add bicarbonate of soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 23x12cm (9×5 in) loaf tin.

4. Bake for 55 to 60 minutes. Cool on wire rack for half an hour before slicing.
